8 oz. S.R. Flour, 4 oz. Margarine, 4 oz. Sugar, 4 oz. Currants, 2 Eggs, Pinch of Salt, A little milk if necessary. Lard or similar fat for frying.
Rub margarine into flour with finger tips, until it resembles bread crumbs. Add sugar, salt and currants, mix well. Lightly beat eggs and add a little at a time to dry mixture, stirring well until a soft (not wet) dough is obtained. If eggs are small, a little milk may be needed to get the right consistency. Roll out and cut to shape. Cook in frying pan over gentle heat, using a little lard to grease the pan to prevent sticking.
